Ingredients
For Shells:
1 ½ cups powdered sugar
1 cup almond flour
3 large egg whites, room temperature
¼ cup granulated sugar
Green gel food coloring
For Pistachio Filling:
½ cup unsalted butter, softened
1 cup powdered sugar
2–3 tablespoons pistachio paste
Instructions
Prepare the Shells: Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper or silicone mats.
Sift the powdered sugar and almond flour together into a bowl. Set aside.
In a separate bowl, whip the egg whites until foamy, then gradually add the granulated sugar. Continue beating until stiff peaks form.
Add a small amount of green gel food coloring and gently fold it into the egg whites for an even color.
Gradually fold the dry ingredients into the meringue mixture until it reaches a “lava-like” consistency, ensuring it flows slowly without being too runny.
Transfer the batter into a piping bag and pipe small circles (about 1 inch) onto the prepared baking sheets.
Tap the baking sheets on the counter to release air bubbles. Let the macarons rest at room temperature for 30–45 minutes, or until a thin skin forms on the surface.
Bake for 15–18 minutes. Allow them to cool completely before removing from the parchment paper.
Prepare the Pistachio Filling: In a bowl, beat the softened butter until creamy.
Gradually add the powdered sugar and beat until smooth.
Mix in the pistachio paste until the filling is fully combined.
